For the 2013 Chefs Across The Water event, Hastings House Country House Hotel is proud to welcome Chef Denis Cotter to prepare a five course dinner in our Hastings House Dining Room Sept 30th.
Denis Cotter is the creator of an original and unique style of meat-free cuisine, showcased in his restaurant, Cafe Paradiso, in Cork, Ireland, and in his four acclaimed cookbooks, including ‘Paradiso Seasons’, awarded best vegetarian cookbook in the world in 2004, and his latest ‘for the love of food’, published by Harper Collins in Canada in 2011.
He is also an experienced cookery teacher and consultant, having taught at many leading cookery schools in Ireland and the UK, as well as some appearances in Canada, including the Stratford Chefs School. Denis now lives in Stratford, Ontario and is currently working on a Canadian restaurant project.

Proceeds from this event go to Salt Spring Agricultural Alliance's effort to establish a produce cold storage and production facility. previous years events contributed $3000.00 towards the now operational Salt Spring Island Abattoir. Hastings House Country House Hotel is proud to contribute to these and other worthwhile projects to support our island farmers and livestock producers who in turn provide our dining room with the freshest, highest quality ingredients our loyal patrons deserve.
